Toasted

Yesterday my Mom bought some cooked shrimp.  There were some leftover which I gleefully took to whip up a dinner recipe. After doing some searching,  I finally decided to whip up an easy shrimp salad…

  • 12 cooked shrimp
  • cucumber
  • tomato
  • green pepper
  • carrot
  • onion
  • lite mayo
  • shredded cheese

I chopped up all the veggies (feel free to use as much or as little as you want.)  Mine ended up being about 2 parts veggies to 1 part shrimp if that gives you an idea.

I then mixed in a tablespoon of mayo and about a handful of shredded cheese.  I’m not a big fan of mayo however for tuna or any other seafood salad, I think it is 100% necessary!

As you can, this is a vey precise recipe lol 😉

My plan was to serve the shrimp salad in a hotdog bun, just like a lobster roll.  I decided to scoop out the insides of the hotdog bun then squeeze in the toaster to have the bread crisp up a bit.  Bad idea!

After toasting, I tried to get the bun out of the toaster to no avail.  The hotdog bun was stuck and I had to rip out tiny pieces before the toaster was clear of all bread pieces.

(sigh) The whole thing ended up being very messy with toaster crumbs everywhere lol  I didn’t want to waste the now toasted bun, so I chopped up the rest threw it on the lettuce and add a scoop of shrimp salad.  Not exactly the look I had in mind haha, I’ll spare you the photos!

Since this is my last week in town, I have a lot on my to-do list!  It mostly includes buying things since everything in NYC has inflated prices.  Everything except nail salons, where you can get a mani/pedi for $20!  I can’t find that deal anywhere in Florida.  But I digress, I have quite a few things to accomplish this weekend, so I am off to do errands!  Hope that the sun stays out today and doesn’t end up like this- blah!

Bargain in the Sky

If you follow me on Twitter you might have seen the bargain flight I was able to score last night!  By bargain, I mean- $62!!!

When I saw this price, I quickly booked my super cheap flight! I will be arriving back in NYC next Friday, a week from today!

That means I get back to this….

…and this!! So excited!

Today I worked from home, which will become my norm very soon!  I’m so excited to start working again full time!

Over the course of these two months at home, I have been working in our headquarter office here in south FL, which is where I have always worked.  But shortly, that will change and I will be working remotely in NYC!!

For breakfast today I had some oats. But really it was heavier in toppings then oats- the way I like it 😀

When lunch rolled around, I wasn’t too hungry.  Which is likely due to these things- Flavored almonds! I am already addicted slightly obsessed with the cinnamon flavored ones.  But yesterday my Mom brought home the Peanut Butter- Chocolate, Sweet and Salty Mix- YUM!

So I snacked on fruit and a bagel thin with cheddar…and naturally I had some more almonds 🙂

Blackout

Yesterday, there were awful storms rolling through! At about 4 o’clock in the afternoon a terrible thunderstorm started that looked more like a hurricane. We were all sitting in the office, when all the sudden- everything went black! Power off. We sat in the dark office, only being illuminated by our phones for about 20 minutes, before the power kicked back in.

On the way home from work I saw this-

I think Silver Alerts may be something unique to south Florida. A Silver Alert is for senior citizens who have Alzheimer’s or another cognitive disorder. It is similar to the alert for a stolen vehicle, only it is for when your loved one goes missing. I probably see one Silver Alert a day- no kidding!

1. The best news I ever received was… that’s hard to narrow down. But for this past month, the best news I had was finding out I could return to my job full time and continue working in NYC- yay! Such a weight off my shoulders!

2. Something I’m looking forward to is… returning to NYC on Friday!!!

3. Something I would never do is… cheat. I think it’s disgusting.

4. If I could choose someone to be my life coach (famous or not, living or dead), I’d choose… hmm… a few people came to mind, either Elizabeth Gilbert because I think her book “Eat, Pray, Love” really inspired me to live and enjoy my life. Or Lucille Ball because she is my favorite actress- I could watch reruns of I Love Lucy all day long.

5. If I had to put a label on my style it would be… clean and modern but somewhat eclectic. Kind of a hodgepodge, I wouldn’t really put myself in one category.

6. One should always treat others… with the level of respect and courtesy they seek from others.

7. I want to visit… all seven continents. So far I’ve only been to two- North America (obv) and Asia.
